what causes enemies to sometimes do INSANE damage?

That's partly why we'd all like to see Flamewolf's mortem.  We're all waiting on you, Flamewolf393; it should be in the mortem folder.

(Also, it's 6 armour)

If we continue in building theories - if the armor was severely damaged already (<25%), then the protection would drop to 1 while movement penalty would persist at full -70%.
Without the mortem, it's just speculations anyway.

EDIT: The protection/resistance reduction does not seem to be mentioned on the Wiki. I'll fix that.

It wasnt just this time though, I have it happen a LOT where an enemy will just somehow kill me from full health in one hit.

Seriously consider the following changes to your playstyle:
* Favour speed (and dodging!) over tankiness.  Meaning make and wear the lightest armour you can get away with, while moving more "off-grid" i.e. diagonally.
* Take cover and use the wait command to lure mobs to you instead of charging towards them.  You are doing this, right?If that fails, then my primary hypothesis that the RNG hates you must be the only reason left.
