So i've been running around as a Technician and I just started wondering...
If i take Medical Armor, turn it into nanofiber Skin to up its resistances, then slap on an onyx attachment... what happens?
Heck, what happens if i just slap Onyx on to medical armor to begin with?

It will still heal you, but will just not be destroyed by damage.
Also I /think/ that the armour value affected by damage is still actually used, but I also think that you can use an armour shard to get it back up again.

BTW, once i have made some experiment in 995. First, I took gothic boots and made P-modded gravity gothic boots. It means that i could stay in lava, receiving 1 damage per turn and gothic boots never degraded.. Second, i took medical armor and o-modded it. What i planned is to stay in lava with modded medical armor and gravity gothic boots equipped and press WAIT button and take Iron Skull medal at the end. Imagine my surprise when after very short time o-modded medical armor turned yellowm then red, then it vanished.

Yeah, onyx armors still have durability. Just most things don't damage them. Putting onyx on damaged armors didn't even used to repair them until fairly recently.
I'd consider the interaction between onyx and medical armor a bug. I'm not sure if it should allow infinite health recharge though.

I just finished a run wearing the Medical armor, but it not being affected by damage is a hoax. Or is it true that it should be affected, but just won't be taken below the magical 20% limit?

Medical armor takes damage just like any other armor. The purpose of this thread is to discuss what happens when you mod medical armor to make it so it can't be damaged. This can be done with certain assemblies/rare mods.

There's a difference between "cannot be destroyed by damage" and "cannot lose durability via damage" (which are, in fact, determined using two separate item flags). Medical Powerarmor and all uniques fall under the first category, determined by the IF_NODESTROY flag. The second, which is determined by the IF_NODURABILITY flag, only exists on a select few items, or can be applied with an onyx armor pack. Neither of these are called when medical armor "drains" durability in order to heal the player, which is why durability loss can still occur in that specific case.
So yeah, the Wiki is still correct.
