Doesn't work that way.
3d6x3 means 3 shots of 3d6 damage. MEaning armor is applied 3 times. So, unless you were naked and had no TaN, you'd not die.
Also, He'd have to roll 9 6s, which is a 1/10077696 chance.

Even if you rolled all 5s, you're still doing 45 damage. So unless you have 100+% health and armor, you could still be one shotted even without rolling all 6's.

9 rolls of either 5 or 6, equates to average damage of 49.5 at a probability of 1/(3^9) = 1/19683.

9 rolls of either 4, 5 or 6 equates to average damage of 45 at a probability of 1/(2^9) = 1/512.

On the other hand, perhaps such obscene damage is to be expected when not wearing armor. Facing a boss without armor sounds pretty silly to me.
